Watermelon and Feta Salad

A special thanks to Monica Stanway for sharing her favourite summer salads. It is the perfect side for a good old Kiwi BBQ.

Ingredients

  • 600g or about half a watermelon
  • 140g bag of rocket or salad leaves
  • 1 bunch of fresh mint, chopped
  • 200g creamy feta, crumbled
  • 1 small red onion
  • 2 tablespoons white wine vinegar
  • Good drizzle olive oil
  • 1 lime

 

Method

  1. Scoop out and chop the watermelon flesh into chunks, discarding the peel.
  2. Peel and finely slice the onion, pop it in a small bowl with the vinegar and lime juice and set aside for 10 minutes. This will remove the sting from the onion.
  3. On a large platter, spread salad leaves, watermelon, onion, mint and feta.
  4. Mix the vinegar and lime juice mixture with olive oil and drizzle over the salad just before serving.


Optional: Top with any extras – cucumber, tomatoes, blueberries, orange segments or cashew nuts are crowd favourites.
